The challenge will run April 17-21, 2017. Every morning around 9 a.m. CT, prepping our dinner to throw in the slow cooker for the day so that when 6 p.m. rolls around dinner is READY!

My hope is that this will inspire you with some new recipe ideas, encourage you to not wait until the last minute to think about what you’re having for dinner, and motivate you to eat at home more (even on busy nights!) so you can save money.

    Hey Crystal! First off, I’d like to say I’m super excited for this challenge!
    Recently, I switched to a plant based diet. While my fiancé has yet to change, it makes making meals difficult as I don’t want to push the change on him. These slow cook meals may be the perfect solution for us.
    On-the-go, quick meals lead to bad choices and last minute decisions can lead to over eating (I’ll chow down on chips while waiting) and prepping helps to prevent me from messing up too! I can’t wait to see what you have in store for us!

    This looks pretty cool! I’ll give it a shot but I already try to meal plan, especially slow cooker meals and freezer meals, due to a health issue that makes my brain not work too well after about noon. I tell hubby, if I don’t know before lunch what I am doing for dinner, it is order out! LOL I currently try to make a menu for a month, picky teenage daughter, set in his ways hubby (I literally just got him to try roasted asparagus last week-he thinks it should be can mushy, not crisp tender, yuck! {He LOVED it by the way!}) makes it where we pretty much stick to the same foods, so I am always looking for new ideas! Thank you for this and all you do!

    Hey Crystal! I’d love to eat more at home. My son is very, very “choosy” about his meals. I’m trying not to make things boring, and also want to find meals we can eat together. Separate meals are really becoming a huge pain. Anyway, I’m going to check out the Facebook group and see if I can get my mom to jump in, too.

    I’m absolutely loving your Facebook Life videos from the challenge! How was the garlic tilapia hat you made? I’m thinking of signing up for this meal plan service, although my family and I are pescatarians ( quasi vegetarians that still eat seafood). Do you think there are enough vegetarian and seafood meals in their service? Thanks so much!

      In all honesty, the tilapia was probably our least favorite meal. I think you could probably swap out some of the meats for seafood — the chicken meals, for sure. You might ask the Eat at Home folks for their thoughts on this… or sign up and then look through things and ask for a refund if you feel like it’s just not a good fit.
