Whole-Wheat Blender Pancakes

We’re headed to the for half of this week, so meals are going to be super simple around here and I’m only planning four days of meals since we’ll be traveling or at the conference the rest of the week. In addition, I’m going to skip freezer cooking this week.

Breakfasts

Oatmeal, Whole-Wheat Blender Pancakes, Cereal, Eggs, and/or Fruit

Lunches

Mac & cheese, fruit
Snack-y lunch
PB&J, carrot sticks, apples
Cheese quesadillas, carrot sticks

Snacks

Fruit/veggies
Popcorn

Dinners

Dinner with extended family
, fruit, tossed salad
Bean & Cheese Burritos, fruit, veggies
Ritzy Chicken, fruit, veggies

    Our menu plan this week looks like this:

    My goal this month is to try at least one new main dish recipe every week, along with several other new recipes. It’s time to be intentional about getting out of our recipe rut.

    On that note, I made homemade freezer biscuits and make ahead butterhorns last week and they were both huge successes. In both recipes I substituted half of the butter for nonfat Greek yogurt. Thanks for sharing great recipes!

    We have a busy week, 2 Birthday parties and a school event busy week. Hoping not to eat out. Here is our menu

    We did chicken rice black beam skillet tonight

    Tomorrow will be crockpot chili (busy day!)

    Wednesday will be Panko crusted chicken

    Thurs and fri leftovers

    Saturday wedding 🙂

    Sunday dinner with my extended family 🙂

    I forgot to look at the calendar when I planned this, so we’ll be eating all but two of these meals 😉

    This week we are using leftover ham from Easter and attempting to grill outside, even if it isn’t that warm in Wisconsin yet! I also like to try a new recipe each week and try to fit in a little freezer cooking time. Here is our menu this week:

    Oh and I made your crockpot yogurt last week, and was amazed how easy it was! I found milk clearance down to 50 cents and decided that was the day to try making it. My family loves it, I will definitely be making it again!

    We were invited to have Easter dinner with family, so this week I am cooking up the ham that I bought on sale and making it stretch into several meals.
