Baking Day – Part 2

We started off the morning with making juice for breakfast. Sadly, I can't drink fresh juice right now due to my heartburn/reflux, but the rest of the family thoroughly enjoyed it. And then I cleaned up the kitchen and started the dishwasher so we could begin our baking with an orderly work space.

After that, I mixed up the dough for the Whole-Wheat French Bread Rolls. While the yeast, sugar, and water were sitting for ten minutes, I whipped up the Super Power Muffins and got those into the oven.

Then it was back to finish up the roll dough and get that rising.

The muffins came out looking pretty scrumptious and the family taste-testing of them went over fairly well. So I'm guessing these will be something I'll definitely be making again. They were a little more dessert-like than muffin-like, but considering they have peanut butter, bananas, and whole-wheat flour, there's quite a bit of nutrition in them as well.

I added in an extra mashed banana instead of the applesauce or carrot puree and also added in a little more than the called for amount of chocolate chips. Next time, I'd like to try adding in carrot puree and see how that goes over.

I'm drinking some water and putting my feet up for a little while and then it's back to the kitchen to finish the rolls and make more muffins.

    i decided to join you after checking out the recipes! i just took the banana bread out of the oven, the rolls dough is ready for me to split it into 16 balls, and 1/2 the muffins were eaten after our lunch (and that’s with 1 chopped, not even shredded carrot, no peanut butter due to allergies, extra applesauce, and M&Ms added).

    thanks for the inspiration! the kiddos and i are having a fun baking/learning day!

    I would just like to say that I love your blog. I read it daily. I am a mother of 4 and we are trying to conceive as we speak and having stockpiled freezer is very important to me as the time will come closer when we will have a new one.     December212012 here: I personally don’t like to keep foods in the freezer for longer than 3-4 months maximum and only keep breads, etc. for 2 months maximum. So I started making the main dish type recipes around 30-32 weeks and the bread recipes in the last few weeks.

    Grr! I was going to join you but I realized I am out of foil, saran wrap and freezer bags! I did make rolls though, and am trying out a new Broccoli Cheese soup recipe tonight! Yum! Have fun!

    I’ve just learned that I have to drop all gluten, soy, dairy, etc from my diet b/c my son is allergic to them (and I’m breastfeeding) so today I’ll be experimenting with gluten free baking. : )

    I did some baking over the last two days as I realized the eggs were about to go bad! I’ve made up 4 boxes of Jiffy muffins (I don’t do the from scratch thing yet) and a batch of pancakes. I froze the pancakes in single serving sizes and also froze most of the muffins. With my small freezer already pretty stocked w/ recent veggie sale purchases, that’s all I had room for. Oh well. It’ll keep me for quite a while, especially as I usually eat cereal for breakfast.

    I am baking raspberry chocolate chip muffins (whole wheat) and belguim waffles for my mom’s night out with our homeschool group. I might even do millet and blueberry muffins too but we will see :o)

    Ah, I so miss the days of baking! These days, not only do I usually not have the time or energy, but after going low-carb and losing a bunch of weight, and not having kids around anymore since they graduated and flew away, I really can’t justify having cookies/muffins in the house at all 🙁 But I sure did love making those!! When I’m really inclined some weekends, I still bake and just bring everything in here to the office for others to enjoy – LOL!

    I’m not baking anything today, but just wanted to comment that cooking ahead is good for another reason-not having to heat up your oven several times. I ususally try to get several things going so I can just pull one thing out and put in another or cook them simultaneously. And sometimes you can even save on dish washing, too, by using your pots for more than one thing-even if they need a quick rinse in between.

    I am just doing a little. We are having rolls for dinner and I am making coconut bread to eat and freeze. Several friends LOVE the coconut bread, so I might end up giving some as “just because” gifts 🙂

    My new Bosch mixer came today so tomorrow is baking day here. Although I did boil down sap to make maple syrup today! My house smells yummy. Homemade pizza dough is working right now.

    Just put the Super Power Muffins in the oven – thanks for sharing that recipe! Made a few tweaks to the recipe: 1/2 cup packed brown sugar, 1/2 cup PB, 2 mashed bananas, 1/2 cup unsweetened apple sauce, 1/4cup grated carrot, 1/2 tsp cinnamon, and 1/3 cup of raisins. I will try to reduce sugar to 1/3 up next time and up the carrots to 1/3 to 1/2 cup. I think wheat germ would be a good addition to this recipe too. They turned out great and nice and puffy too. YUM!

    To make your juicing clean up easier – use the small clear trash bags, the ones you would use for a small trash can. put it in the hopper to catch the juice left overs. when your done pull out the hopper out comes the bag. clean hopper. Much less work. You still have to clean the inside, but you don’t have to try and get the fiber out of the corners of the hopper.Makes juicing more enjoyable.

    Also, do you peel your apples before you juice them? I juiced some yesterday and did not peel them and the juice was great. Just wondering what you do.
